Yeah, I should have mentioned "add water only" instant mashed potatoes.

99 Cent stores seem to have it frequently.

Costco brand here in Quebec is Honest Earth. Only ingredients are dehydrated potatoes, butter and sea salt (and may contain milk) Those at the dollar store have a much longer list of unpronounceables usually.

Although you still need to add milk and butter with the water, powdered milk solves the one problem. I'm supposing margarine would be easier than butter. Desperate times and all that.

Important addins:
Garlic!!! (for those with good cooler systems, a small jar of crushed garlic is handy) or
Mrs. Dash Spicy Mix!!! Mmmmmmmmm good

Important thing to remember with instant potatoes: Eat them ALL. Leftovers turn black and gooey, so gift it fresh.

Thats because you're pretty bad ass, Dougly!

I like to add hot water and spices when camping.
At home its lots of butter, milk, onions, and stuff. Camping its just water and spices.

Damn straight! Every Mess kit should have a water tight seal-able salt, pepper, and sugar. I also recommend Mrs. Dash and/or Lawry's Seasoning Salt. Both have twist on seal-able lids. Something else worth adding are those little packets of crushed red peppers that can be snagged from pizza joints. They last a long time with out being refrigerated.

What sort of powder potatoes are you eating that turn black?

Ones without preservatives. Haven't you ever noticed that a peeled potato turns black if left out long enough without further pampering? Give it a try....

Huh? I guess either I never waited around for the powdered taters to turn black or I get the ones with enough preservatives that they are barely even potatoes, lol. I new potatoes turned black after a while, just never seen the powdered taters do it.
But we've also started buying the single meal flavored sort in a pouch rather than the big box of basic potatoes.

I'm so sorry. It's a reference to the potato famine. With a little sly dig at the existence of Uncle Ben's while I'm at it.

I get the fancier ones. There are soooo many to choose from these days.

No butter, milk or any dairy...blech! Try EVO = extra virgin olive oil ;) and salt n pepper.

A great-Uncle of mine was visiting the dude ranch I worked at one summer in Wyoming back in the early 80's and a customer asked if the potatoes we served were instant. He just looked at her and said "ma'am, I've been potato farming for 40 years, I can guarantee you none of them are instant"

(they actually were, but his line was better than the truth)

"Ingredients: dehydrated potatoes, butter, sea salt. Contains: milk."
Instructions, per pouch, say boil 2 cups of water with 3 tbsp of butter, remove from heat and add 3/4 cup of cold milk, stir in one pouch of potatoes, let stand 10 seconds and serve.
I just add water. Doesn't need anything else (great for canoe trips!), but enhance at will.
Doesn't taste like instant potatoes. A number of people I know have served it to people at Xmas and such, and none realized it was instant, same wanting to know how such good mashed potatoes were made...

Make sure you mix one pouch up before you use it. It makes more than one would think.

My family loves potatoes, they are probably on our menu for at least one meal every day, and I have yet to taste any instant potato product that actually tastes good. I will be sticking to real potatoes including mashed that can be cooked in 15-20 minutes if you cut them small. Baked on the grill in foil takes about 40 minutes and you can eat the skins with no waste except for the foil which can be reused if you are careful with it and if you cook enough you have hash browns to go with the bacon the next morning:-) For my money and my menu's Instant mashed potatoes are just wrong.

I'm with you on this one, but I really can't say I have tried any instant potatoes for a long, long, time - at least not on purpose. Are there really some good ones out there now? I am willing to be convinced.

Instant mash potatos makes a great coating for fried chicken.

Instant stuffing is also a good coating after running it through a cuisinart! 8)
