I agree, if I wake up for breakfast (before its too hot to sleep), then I have a huge breakfast. I found that during the high heat of the day, noonish to 4ish eating was not desirable.
I found that one of the easiest ways to make good meals was to precook whatever, and put it in one of those heat sealer bags. Then all you have to do is boil water, and drop the bags in. I've never seen one melt in the water. We had pot roast with carrots, onions, and potatoes. Sloppy Joe mixed with mac and cheese (protein and carbs). Its easy, quick, one pot, meals. The water used to boil the bags was then used to do the dishes.
