Alright, when the jet swoops down, and then pulls g's it emphasizes the low pressure above the wing needed for lift, and this lowered air pressure results in the air temperature in the immediate vicinity being reduced.
*notices Simon sneaking in late and gives him the evil eye*
Now, if conditions are right, this lowered temperature causes water vapor to condense out, forming a short lived 'cloud' that you see here.. or some such bullshit..
