Be sure to buy a diesel engine. Twice the fuel mileage, and the price of the fuel only slightly higher. And no AT545 transmission, which "soaks up" extra fuel because the torque converter does not lock at cruising speed.
As for the fun stuff inside the bus.... If you are considering a Ferris wheel and a bowling alley, you will indeed have to adjust your expectations. But I do know a burner who has built several buses with a hot tub (and sold them at a profit).
My top priority is a bathroom -- a LARGE bath room. Seems to me, we don't appreciate the fabulous convenience of indoor plumbing until we find ourselves without it in the middle of the night.
A shower is not really necessary, since we can wash the body reasonably well with a couple of quarts of hot water in a basin and a wash cloth. (And water for this can be heated on a propane cook-top or such.) But it is very much worth the effort to install a good RV toilet and associated plumbing. And make the bathroom spacious, because people will want to wash each other, and change elaborate outfits, and thus require more elbow room than one might expect.
