2 packages cleaned and cut collard greens or one large bunch cleaned and cut
- Combine everything above except the greens in a large stew pot with water to the top.
- Boil everything for at least 2-3 hours.
- Pull hocks and wings out, and remove all meat that you can. Put meat back in water, discard bones.
- Add greens, and put just enough water to cover.
- Lightly boil around 25-35 mins.. just enough until they start to turn from bright green to cooked color, and when you try the biggest stem piece out it's cooked but still a little snappy.
- They will keep cooking a little as they sit, so don't overcook! Do NOT let them get olive green and mushy..

Junglesmackin' yo' ASS ribs:
Ingredients:
1 vacuum 3 pack of baby back ribs (Sam's Club has the best..)
3 lemons
1 large white onion
- Make up rib rub and heavily coat ribs 24 hours ahead of time
1/2 cup brown sugar
1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cayenne
1 tablespoon dried mustard
- Lay ribs out on broiler pan with rack on. Thinly slice lemons and distribute over ribs. Peel/slice entire onion and distribute evenly over ribs.
- Wrap tightly around edges with industrial (large sized) aluminum foil.. ensuring a good seal.
- Refrigerate overnight.
- When ready to serve, bake in oven on middle rack @225 deg F for 5 hours.
- Remove from oven, take off foil, discard onions and lemons. Slather ribs with Sweet Baby Ray's Original BBQ Sauce.
- Grill over high heat charcoal for 5-10 minutes per side.. just enough to caramelize/crispy up the sauce.
- ENJOY the best baby back ribs you've ever had!
